Upside down Nectarine Cake

As a pastry chef, when I’m baking at home I don’t like to overcomplicate making something sweet.

This cake is perfectly delicious, super simple, and the best part… it’s all made in just one bowl — my favourite. 😍

Recipe

Ingredients

• 2 cups flour
• 1 cup caster sugar
• 1 tsp baking soda
• ½ tsp salt
• 2 eggs
• 1 cup milk
• 7 tbsp melted butter
• 2 tbsp brown sugar
• 2–3 yellow nectarines, sliced



Method
1. Preheat oven to 180°C fan forced.
2. In a bowl combine flour, caster sugar, baking soda and salt.
3. Make a well in the centre and add the eggs, milk and 4 tbsp of the melted butter.
4. Stir gently with a spatula until combined.
5. In an 8-inch cake pan, add the remaining melted butter and the brown sugar.
6. Arrange sliced nectarines over the butter and sugar mixture. Sprinkle a little extra brown sugar over the fruit.
7. Pour the cake batter evenly over the nectarines.
8. Bake for 45 minutes until golden and cooked through.
9. Let the cake rest for 10 minutes, then carefully flip onto a serving plate.



Hot tip: Always use salted butter in your baking… trust me 😉
