These come together quickly and are great for lunches, light dinners, or even straight from the fridge the next day.
Crispy on the outside, soft in the middle and packed with herbs and protein.

Recipe
Ingredients (Fritters)
β’ 2 x 185g tins tuna, drained
β’ 3 eggs
β’ 3 cups peas
β’ 1 cup breadcrumbs
β’ Β½ cup flour
β’ 2 cloves garlic, grated
β’ Fresh dill
β’ Fresh chives
β’ Salt & pepper
β’ Olive oil for frying

Method
1. In a bowl combine tuna, peas, eggs, breadcrumbs and flour.
2. Add grated garlic, chopped dill and chives. Season with salt and pepper.
3. Mix until everything is well combined.
4. Shape into fritters.
5. Heat olive oil in a pan and cook fritters until golden on both sides and cooked through.

Yoghurt Sauce
β’ Greek yoghurt
β’ Garlic
β’ Chives
β’ Dill
β’ Lemon juice
β’ Grated cucumber
Mix together and serve with the fritters.
