This one’s quick, satisfying and on repeat in our house.

🥢 Crispy Beef Peanut Noodles
Ingredients
Beef
• 500g beef mince
• 1 tbsp sesame oil
• 1 garlic clove, grated
• 1 tbsp soy sauce
• 1 tsp grated ginger
Peanut noodle sauce
• 2 tbsp peanut butter (I use powder)
• 2 tbsp soy sauce
• ½ tbsp Worcestershire sauce
• 1 garlic clove, grated
• ½ tsp sesame oil
• 1 tbsp rice wine vinegar
Noodles + greens
• 2 packets instant noodles (I use Wholesome Bowl)
• 1 bunch pak choy, lightly blanched
To serve
• Spring onion
• Sesame seeds
• Crispy fried shallots

👩🏻🍳 Method
1. Cook noodles according to packet instructions. In the same water, lightly blanch the pak choy. Set aside.
2. Heat a pan and cook the beef mince in chunks, letting it sit so it gets really crispy.
3. Add sesame oil, garlic, soy sauce and ginger. Toss to combine and cook until fragrant.
4. In a bowl, mix all peanut sauce ingredients until smooth.
5. Add cooked noodles to the pan with the beef, pour over the peanut sauce and toss everything together.
6. Serve with blanched pak choy and top with spring onion, sesame seeds and crispy shallots.
