Hot Cross Buns

These aren’t just any buns…

we used to make these every single Easter in our cake shop growing up and let’s just say I’ve finally got my hands on my dad’s recipe with just a few tweaks (sorry Dad) 😉

Soft, fluffy, perfectly spiced and filled with juicy sultanas…finished with a glossy glaze and served with my homemade salted maple butter 🤍

Honestly, once you make these… you won’t go back.

Recipe

Ingredients:

– 3 tsp yeast

– 1/2 cup sugar

– 375ml warm milk

– 4 cups flour

– 2 tsp cinnamon

– 1/4 tsp ground clove

– 1/4 tsp nutmeg

– 1/2 tsp salt

– 1 cup sultanas

– Zest of 1 orange

– 50g butter, melted

✝️ Cross

– 1/2 cup flour

– ~1/4 cup water (mix to a paste)

🍊 Glaze

– Orange marmalade + fig jam (warmed)

🧈 Salted Maple Butter

– 500ml cream (whipped to butter)

– Maple syrup (to taste)

– Pinch of salt

👩‍🍳 Method

1. Pour milk in a microwave safe bowl or measuring cup, add sugar and yeast set aside. Mix all dry ingredients, then milk mixture slowly-add in the melted butter to form a soft dough.

2. Knead until smooth and elastic.

3. Cover and let rise for 1-2 hours (or until doubled).

4. Shape into buns I make them large so into 8 but this recipe makes 12 traditional size ones -place onto oiled tray.

5. Let rise again for 45 mins.

6. Pipe crosses on top.

7. Bake at 180°C for ~30 mins or until golden.

8. While warm, brush with glaze.

Serve warm with your salted maple butter 🤍
