Easter in our home wouldn’t feel the same without these…Soft, golden pastries filled with the most aromatic cheese mixture they’re sweet, a little salty, and full of flavour.The smell alone is enough to bring back all the Easter feels 🥹

Recipe

🧀 Filling (prepare the night before)

• 500g flaouna cheese

• ¼ cup semolina

• 4 eggs

• 1 tsp mahleb

• 1 tsp mastic

• 1 tsp mint

• 120g sultanas

Method:

Add everything into a bowl, mix well, cover and place in the fridge overnight.

(This allows the cheese to dry out and the flavours to develop 🤍)

✨ Dough

• 500g flour

• 2 eggs

• 1 tsp baking powder

• 1 tsp mahleb

• 1 tsp mastic

• 1 tsp sugar

• 125g butter, melted

• 1 tsp yeast

• Pinch of salt

• 80ml warm milk

• 60ml warm water

Method:

1. In a jug, combine milk and water and lightly warm in the microwave.

2. Add yeast and sugar, mix and let it activate.

3. In a mixer, add flour, eggs, baking powder, mahleb and mastic.

4. Slowly pour in the yeast mixture while mixing.

5. Gradually add the melted butter and knead until smooth.

6. Cover and let rise for 1–2 hours, or until doubled in size.

🐣 Assembly

• Sesame seeds (white & black)

• 1 egg (for egg wash)

1. Divide dough into 12 even balls.

2. On a tea towel, spread sesame seeds and sprinkle with a little water.

3. Flatten each dough ball with your fingers, then lightly roll with a rolling pin.

4. Press dough onto the sesame seeds.

5. Shape filling into a ball and place in the centre.

6. Fold two opposite sides in, then the other two to form a square.

7. Seal edges by pressing with a fork.

8. Brush the folds with egg wash.

🔥 Baking

Bake at 200°C for 40 minutes on the middle rack, until golden.
